I know what you're thinking: a Celiac in a brewery? Sounds like the start of a real sick joke. But I'm serious! Snake River Brewing in Jackson Hole, Wyoming is inside a big cinderblock building with exposed beams and lots of light to showcase their food, greeting hungry travelers with all sorts of local specialties. I started with their smoky wild game chili, made with bison and beans - a delicious venture into the local fare that will definitely make you feel a little uncomfortable since driving around the area you'll see lots of these huge furry bovines.
What I'd recommend for a filling and tasty gluten free meal here are the pulled pork tacos, warm corn tortillas topped with cotija and sides of slaw and salsa verde. These flavorful tacos will give you the energy to hit the slopes or hop on a horse (depending on the weather) after a long flight, fighting off that jet lag a little longer so you can start Snapchatting and Instagramming those mountains! Just make sure your phone is charged up and you have service out there (maybe bring some extra warm layers just in case).
Wyoming is a charming state with all sorts of interesting edibles (no not that kind) that you can't get anywhere else. I'd highly recommend starting out the Brewpub, for a relaxing place to get your bearings and start the local tasting.
As always, I don't have Celiac and don't pretend to at restaurants! At locations where my family isn't with me I don't ask for special food, so I'm always interested in feedback from those with Celiac who have visited these places or who have other Celiac-free restaurants in the Jackson Hole area they'd recommend!
